Cuisine & Quality Ingredients of Mitsuyasu

The taste of the dishes at Mitsuyasu is refined, allowing you to experience a delicate balance of flavors and ingredients. The owner's commitment to seeking the finest ingredients takes him to various regions, where he visits trusted farmers and is inspired by the unique qualities of the ingredients he acquires. For instance, in their "Hassun" course, Mitsuyasu breaks away from the traditional approach of combining seafood and mountain ingredients, instead opting to showcase the full potential of vegetables and mushrooms. They artfully incorporate the vibrant colors of spring wild vegetables, create refreshing dishes with summer vegetables served chilled, highlight the richness of autumn's harvest with chestnuts and mushrooms taking center stage, and embrace the comforting warmth of winter root vegetables. Their abundant creativity is evident in the dishes, which celebrate the blessings of each season from the earth.

Presentation

The minimalistic presentation of their dishes at Mitsuyasu ensures that the focus remains on the exceptional ingredients, allowing their flavors to shine without unnecessary distractions. Their inventive approach is not about adding complexity but rather exploring the depth and clarity of flavors by stripping away unnecessary elements. Dishes like sake-boiled bamboo shoots and their signature “Sobagaki”, a boiled buckwheat dough typically torn into pieces by hand and eaten with white miso, showcase the success of their philosophy. The two Michelin stars earned by Mitsuyasu attest to the excellence of their culinary approach, but to truly appreciate it, one must experience it firsthand.
