Shortly after its establishment, Hiwatashi earned a Michelin one-star rating, welcoming a diverse clientele of various ages from both within and outside Japan. The quaint Kyoto machiya (traditional townhouse) where Matsuki's children had grown and operated the restaurant was becoming increasingly cramped. Additionally, Matsuki sensed limitations in expanding his traditional Japanese cuisine in Kyoto. To address these challenges, he made the decision to relocate to Toyama Prefecture. After moving the restaurant to Toyama in 2023, he aspires to contribute to the local community by encouraging guests to visit Tora City for both dining and local tourism. This aspiration keeps him committed to his culinary craft day by day.</p><h3>Antique House</h3><p>At Hiwatashi, the spacious property covers an area of 1,122 square meters and features a combined residence and restaurant, a storage facility (kura), and a parking area. The restaurant consists of three rooms with a total of 12 seats, and the furniture from their previous establishment in Kyoto, including tables and chairs, has been seamlessly integrated. The building is a renovation of a traditional Japanese farmhouse with the distinctive construction method called "Wakunouchi," characterized by thick pillars.
