Chef & History of Hanakoji Sawada

Chef Tomoya Kago has gained experience in the hotel's Japanese cuisine department, working at Sapporo Washington Hotel, ANA Hotel Sapporo, and other hotels after graduating from high school. He further honed his skills at a traditional Japanese restaurant in Tokyo. Later, he returned to Sapporo and joined Kappo Sawada as the head chef. Although Kappo Sawada closed in 2009, he inherited the name "Sawada" and became the proprietor of "Hanakoji Sawada," proudly displaying his signboard. Drawing from his extensive experience, he discerns dishes that suit the seasonal ingredients and preferences of his customers, offering not only traditional Japanese cuisine but also innovative creations. In 2017, Hanakoji Sawada was awarded three Michelin stars.

The dish "Uni Nasu (sea urchin and eggplant)" features warm eggplant topped with chilled sea urchin, complementing the exquisite taste of the chilled sea urchin with the warm eggplant. We will arrange your table for you at Hanakoji Sawada and pre-order [Dinner] JPNEAZY Special Course1, [Dinner] JPNEAZY Special Course2. You can fully enjoy there where they are one of the best restaurants in Hokkaido.
You do not need to worry about paying the course fee, but you need to pay drinks and additional food on the reservation date.
