“Kinobu” is a Japanese kaiseki restaurant located in Kyoto. Kinobu is a long-established Japanese restaurant that was founded in 1935 as a branch of the renowned ryokan (traditional inn) "Kifuji," which was patronized by the Imperial Palace. Kifuji has been the foundation of Kinobu, offering a dreamlike setting, a gentle atmosphere, and delicious cuisine, catering to the desires of all customers, making it the finest traditional Kyoto restaurant. The third-generation chef of Kinobu has brought innovation, using carefully selected seasonal ingredients generously and creating a harmonious blend of meticulous and delicate flavors that are truly remarkable. Kinobu is a Michelin one-star restaurant and has also received one star in the 2023 edition of the world-famous gourmet guide, the Michelin Guide Kyoto-Osaka.
At Kinobu, the day begins with the chef's daily trip to the market to source seafood. Rice, citrus fruits, spring vegetables, and wild mountain plants are procured from Aomori and Nagano. Many quality ingredients are sourced directly from producers all over the country. One of Chef's specialties at Kinobu is the "Fukahire and Sesame Tofu Hot Pot." This dish features homemade sesame tofu with a texture reminiscent of Shirako, paired with the unique texture of sea cucumber. The soup is rich, made with a Japanese dashi base enhanced with chicken broth and Kinka ham. This dish is available year-round. An extensive selection of over 40 wines and approximately 20 types of sake from all over Japan complements the cuisine at Kinobu.
The current owner-chef of Kinobu, Takuji Takahashi, succeeded as the third generation after completing a 5-year apprenticeship at 'Tokyo Kitcho.' Chef Takuji Takahashi, who also holds the title of Senior Sommelier, combines traditional Japanese cuisine with innovative cooking methods. He incorporates elements like stocks and broths commonly used in French cuisine into his dishes, and explores collaborations between wine and Japanese cuisine. Chef Takahashi's cooking allows you to experience the expansive world of Japanese cuisine, richly unfolding with new dimensions.
The building of Kinobu was crafted by the same construction company that built the Kyoto State Guest House, using high-quality wood for the entrance. The restaurant consists entirely of private rooms, offering 13 rooms that can accommodate various group sizes. The rooms with sunken kotatsu-style seating provide a relaxed atmosphere similar to sitting in chairs. Kinobu also offers English-speaking services, catering to international guests.
Founder Motonobu started Kinobu, as a small catering business in 1935, operating from a room of about ten Tatami mats. He would visit the market every morning at 6 a.m., carefully selecting high-quality fish, which he would then prepare and deliver to customers' homes. The second generation, Nobuaki, expanded the business into a large restaurant capable of accommodating over 200 guests. With the support of the kimono shops and merchant houses in the Machiya (traditional townhouse) neighborhood, they provided kaiseki-style meals. Nevertheless, they continued the founder's mission and expanded their catering services throughout Kyoto.
