“Iwasaki (Gosho Iwasaki)” is a traditional Kyoto kaiseki restaurant. At Iwasaki, you can enjoy the unique ambiance of Kyoto and savor seasonal dishes. The hallmark of Iwasaki's cuisine lies in its delicately crafted flavors, with meticulous attention to detail. The restaurant has been awarded a Michelin star.
"Iwasaki" offers dishes that reflect modern Kyoto while respecting the techniques and traditions of the past. Chef Iwasaki, with his Michelin-starred expertise, provides exceptional culinary creations. The cuisine, made with carefully selected seasonal ingredients such as Kyoto vegetables and fresh local fish, is renowned for its refined taste. The essence of Kyoto is subtly present in the dishes, as well as the unique tradition of serving hot pots (nabe) tableside instead of "takiawase", allows guests to savor the freshness of the dish. For instance, the "Spring Bitterness Hot Pot" is a delight with its savory bitterness of beef and mountain vegetables. Moreover, the clay pot rice uses Koshihikari rice from the hometown of Kyotamba-cho, and its tender cooking style reflects the essence of Kyoto's culinary culture.
Yoshinori Iwasaki, the proprietor, is an experienced chef who honed his skills at renowned ryokans and prestigious restaurants in Kyoto. After working for 5 years at "Kodaiji Wakuden," 3 years at "Gion Maruyama," and serving as a head chef for 16 years at "Hiiragiya Bekkan," he decided to open his own restaurant, "Iwasaki". Iwasaki takes pride in its dedication not to repeat the same dishes, adding to its allure and distinctiveness.
Located in a corner of Kyoto's charming historic streetscape, Iwasaki cherishes the encounters with its guests. With his dedication to providing unique dishes on each visit, guests can enjoy a fresh culinary experience every time they come. The restaurant interior features both counter seats and private rooms, creating a traditional Japanese ambiance that embodies the beauty of Japan's heritage.
Iwasaki's collection of tableware includes various pieces gathered over the years. Ranging from Edo-period Ko-Imari and Kyoto-yaki antiques to contemporary works by artisans, the selection is diverse. The owner of Iwasaki expresses the desire for guests to enjoy the diverse tableware along with the progression of the courses. The use of different tableware such as Sometsuke (blue and white porcelain), doro-mono (pottery), and lacquerware, tailored to each dish, adds to the visual appeal. Additionally, the option to choose one's own sake vessel expresses a delightful aspect of their hospitality as it adds a level of personalization to the dining experience.
