Chef of Kisui, Takayuki Kudo

The owner-chef of Kisui, Takayuki Kudo, after gaining experience through training at hotels and Japanese restaurants in Sapporo, established his own restaurant, Kisui, in 2001. In 2015, he relocated the restaurant to its current location. For over 20 years, he has been dedicated to offering high-quality Japanese cuisine in the bustling streets of Susukino in Sapporo.

Chef Kudo is not only an expert in cuisine but also a discerning connoisseur of sake. Kisui offers a rich variety of sake, including seasonal selections like "Nama-zake" (unpasteurized sake) and "Hiya-oroshi." A particular standout is the Junmai sake from Aomori, known as "Denshu," whose name originates from its association with "rice field sake."
