Taku Maruyama is a Japanese Kaiseki restaurant located in Sapporo, Hokkaido. The restaurant has a calm and elegant atmosphere, nestled quietly in a quiet alley just off the main street of the Maruyama area. Since its opening in 2009, it has been supported by gourmet guests and earned one Michelin star in 2017. The concept of the restaurant is to "enjoy Japanese cuisine stylishly," offering traditional and seasonally rich Japanese cuisine as the base while allowing guests to indulge in original and innovative Japanese dishes. In a space that exudes the warmth of wood with a white-based color scheme, you can enjoy dishes using ingredients from Hokkaido and Sapporo.

Cuisine and Ingredients of Taku Maruyama

The popular cuisine of Taku Maruyama is a course menu of about 10 dishes, filled with a sense of the season, incorporating ingredients from Okushiri Island, the hometown of the head chef, as well as seasonal ingredients from Hokkaido. In particular, they emphasize the foundation of Japanese cuisine, which is "Dashi" (broth). They carefully prepare Dashi using two types of kelp, Rausu and Osatsube, and bonito flakes, creating a delicate balance of flavors that have a rich umami and sweetness while maintaining a subtle taste, supporting the overall taste of the dishes. Another notable feature of Taku Maruyama is the inclusion of sushi with vinegared rice and seasonal seafood, incorporated as the final course. During the peak season of sea urchin, enjoying Okushiri Island's saltwater Murasaki Uni as a side dish with "Okushiri," a special Junmai (“rice and water only”), sake made from the island's rice and water, is exceptional. The alcohol lineup includes a variety of wines, mainly from Hokkaido and Okushiri Island.

Owner and chef Hayato Wada, originally from Okushiri Island, is known as a treasure trove of ingredients in Hokkaido. Chef Wada actively incorporates seasonal specialties such as mountain vegetables, mushrooms, and sea urchins harvested on Okushiri Island into the menu, wanting to convey the deliciousness of local ingredients he had as a child. In addition, Hayato Wada sources vegetables from farmers near Sapporo and insists on using fresh fish and shellfish from Hokkaido, making good use of the blessings of unique ingredients from Okushiri Island.

Atmosphere of Taku Maruyama

The interior of Taku Maruyama has been renovated from a 50-year-old house, unified in white, reminiscent of the snow in Hokkaido. The warmth of wood can be felt, and the view from the windows is filled with greenery, creating a comforting atmosphere. The impression is of a stylish yet calm space. In the open kitchen, guests can enjoy watching the chef efficiently prepare the dishes right in front of them, and the luxurious cuisine pays attention to the tableware and presentation. The restaurant consists of seven counter seats, table seats, and semi-private rooms, making it ideal for special occasions such as anniversaries and business entertainment. The semi-private rooms can accommodate up to six people.

We will arrange your table for you at Wada (Taku Maruyama) and pre-order [Lunch] Kids menu, [Lunch] Ran course, [Lunch] Botan course, [Dinner] Hana course. You can fully enjoy there where they are one of the best restaurants in Hokkaido.
You do not need to worry about paying the course fee, but you need to pay drinks and additional food on the reservation date.

*The reservation service fee is included 10% to 15% of the total amount paid.

*The date, time, and number of guests for a reservation can be changed only once.

*The date of cancellation fee will be charged based on each restaurant's business day and JPNEAZY's business day.
