“Ginza Kousui” is a Japanese kaiseki cuisine restaurant located in Tokyo. Ginza Kousui is the restaurant where a chef, who had trained for over a decade in Kyoto and Osaka, and then opened and operated it in his hometown of Shizuoka for 12 years, relocated to Ginza in 2020. At Ginza Kousui, guests can savor the finest seasonal ingredients from all over Japan, shaped by the country's four seasons, as well as the abundant blessings of the sea and mountains unique to Shizuoka. The chef hopes to show every customer who enters through the doors of Ginza Kousui the abundance of seafood from Shizuoka.

Each meal is crafted with care and composition as the dishes are thought of as art pieces to match the visual appeal and tableware that is set in Ginza Kousui. The meals are meant to convey Japan’s traditional culture as the chef creates Hassun (one of appetizers) dishes centered around festivals that happen around the year. Ginza Kousui offers Omakase-style courses, which are meals and sets chosen by the chef himself. The meals consist of vegetables, fish, and meat from Shizuoka Prefecture. The course meals also offer local sake that has come from Shizuoka.

The owner-chef of Ginza Kousui, Koshi Maeda, after honing his skills in Kyoto and Osaka for many years and operating Ginza Kousui in Shizuoka for 12 years, the chef moved to Ginza in 2020. With a deep appreciation for the seasonal ingredients created by Japan's four seasons and the plentiful offerings from the sea and mountains specific to Shizuoka, Chef Koshi Maeda constantly strives for excellence, aiming to provide guests with an opportunity to fully relish these culinary treasures.

History of Ginza Kousui

Chef Koshi Maeda moved his restaurant, Ginza Kousui, from Shizuoka to the Ginza area in order to give his guests only the best. Despite changing locations, much of the food is still sourced from Shizuoka, such as Wasabi teas and Koshihikari rice. One of the reasons this thoughtful chef considered changing locations is that he was hoping to reach more people and spread his love of cooking to a wider audience as more people travel through and around Tokyo. If he can spread the word about the comfort food he grew up on after living in Shizuoka, he feels he is succeeding.

Ginza Kousui is located only a short three-minute walk from Ginza Station. In the Japanese setting of Ginza Kousui, guests are able to dine at cypress counters while eating. The space is refined and dignified as an air of classiness is given inside the restaurant. Ginza Kousui offers a 6-seat counter and a private room with 4 seats. You can enjoy a luxurious time savoring seasonal dishes in a refined space that makes you forget the hustle and bustle.
