“Ginza Shimada” is a Japanese kaiseki restaurant located in Ginza, Tokyo. Ginza Shimada stands out amongst all the other Kaiseki restaurants around as the restaurant follows a standing bar style, so there are no chairs provided. Customers can get a taste of traditional Japanese cuisine reminiscent of Kyoto as they dine in this unique restaurant.
At Ginza Shimada, customers can eat refined cuisine such as chilled soba noodles topped with karasumi or uni with Japanese spiny lobster, despite it being in a setting where customers eat while standing. The restaurant offers around 15 different Kaiseki-style dishes and 10 other small appetizers made from daily ingredients. The likes of soba noodles dusted with smoky, umami-rich bottarga; prawn jelly topped with fresh sea urchin roe; Kyoto turnip simmered in dashi (broth) and served with grated daikon (Japanese radish) can be also eaten at Ginza Shimada. With their meal, customers are encouraged to drink any sake and beer served.
The owner-chef at Ginza Shimada, Hiroshi Shimada, has experience working with his wide range of knowledge on food after attending culinary courses after graduating from high school on top of being an apprentice and serving as a head chef in the Raffles Hotel in Singapore. Chef Shimada also has years of experience working for five-star hotels and even three Michelin-starred restaurants around Japan. That being said, everyone should trust his judgment when it comes to creating authentic, delicious meals that will leave the customer with a smile on their face.
Ginza Shimada is considered a trendsetter as they provide high-quality meals at their standing bars. One truly unique thing about Ginza Shimada is that there are no seats in this restaurant. There is room for 10 customers that come to this high-end location for a meal. The interior is full of earthen walls and marble at the base of the counter. Customers can dine at a standing bar to really get a true feeling of the Ryotei (traditional Japanese restaurant) style of eating.
