Cuisine of Tagetsu

This Michelin-starred restaurant takes great care and dedication in preparing their Japanese cuisine, particularly their Dashi (broth), which is crafted meticulously from Kombu (kelp) and Katsuobushi (bonito flakes) every day. Another outstanding feature is their commitment to sourcing seasonal ingredients directly from their places of origin, allowing guests to savor flavors that reflect the changing seasons. Their proud creation, the bowl and simmered dishes, showcase the essence of the carefully crafted dashi, capturing the essence of the sea and the mountains in each seasonal dish. During the winter season, the menu includes delicacies such as Wakasa sea bream, Kyoto's Shougo-in daikon, and Yuba Shinjo (`Yuba is a traditional Japanese food made from soy milk), allowing guests to fully enjoy the rich flavors of the broth and the unique taste of each season's offerings.

Chef of Tagetsu, Hideo Mochizuki

Born in 1979 in Yanagawa, Chef Hideo Mochizuki grew up in an environment where his father operated a local shabu-shabu and steak restaurant called "Tagetsu." During his childhood, Mochizuki was passionate about playing baseball, and initially had little intention of taking over the family business. However,a turn of events involving an elbow injury led him to choose a career in the culinary world. After graduating from high school, he underwent training in Japanese cuisine at various establishments, including "Ryunuan" in Shinjuku, "Genyadana Hamada-ya" in Ningyocho, and "Kappo Kisaku" in Azabu-Juban. In August 2013, following the closure of his father's restaurant, he decided to carry on the family legacy and opened his own restaurant under the name "Japanese Cuisine Tagetsu."
