Uniya Shinjuku is a sea urchin specialty restaurant where you can taste the original “sea urchin shabu-shabu”, a popular and much talked-about specialty. Uniya Shinjuku uses raw, additive-free sea urchin purchased through a unique route from Hokkaido, including additive-free whole sea urchin sashimi. The famous “Undanshabu” is a unique and exquisite hot pot in which fresh seafood is shabu-shabu in a broth made of sea urchins. The remaining soup is condensed with the broth from the shabu-shabu ingredients, and when made into golden rice porridge, it is also exquisite. Uniya Shinjuku will do their best to bring smiles and excitement to the customers with a variety of creative dishes using sea urchin and sake that goes well with sea urchin, which only a restaurant specializing in sea urchin can offer.
