The owner-chef of Tamaki, Hiroshi Tamaki, was born and raised in Kobe, Japan, and after gaining experience in hotels and restaurants, he traveled to France. Later, he also studied Japanese cuisine at the kaiseki restaurant "Shigeyoshi" in Omotesando. In 2007, he opened his own restaurant, Tamaki, in Hiroo, where he introduced an innovative style of French cuisine that can be eaten with chopsticks. In 2011, the restaurant was relocated to Ginza. Chef Tamaki holds a deep respect for the seasonal ingredients nurtured by Japan's climate and believes in providing dishes with minimal cooking. His goal is to create dishes that are genuinely delicious and satisfying for Japanese people who have a deep appreciation for delicate and beautiful Japanese cuisine.
Tamaki places importance on creating a relaxed and casual atmosphere where guests can feel at ease. To achieve this, Tamaki offers the option of enjoying the meal with chopsticks.
